Meatless recipe This is an easy meatless recipe from Pat Fisher, dietician at the Locust Street Hy-Vee store and the Iowa Soybean Promotion Board: Dinner Ramen for 2 3 All you need: 2 c. water 8 ounces frozen stir-fry vegetables (without sauce) 1 package low-fat ramen 2 ounces cubed tofu 1/2 package of ramen seasoning 1 or a few drops chili oil or toasted sesame oil, optional 3 All you do: Put water and frozen vegetables into a pot and bring to a boil. (If using frozen tofu cubes, add them -- still frozen -- along with the vegetables.) Add ramen and boil for three minutes. Remove from heat. Stir in tofu (if not added already) and half the enclosed ramen seasoning packet. Place in serving bowl.
